Amaretto Rickey:
2oz Amaretto
2oz Fresh Lime Juice
2 barspoons bar sugar (~3/4 tbsp or so)
Zest lime in mixing glass, add sugar, lime juice and amaretto. Shake over ice, double strain into ice-filled Collins glass, top with soda and give quick stir.
